our roots: A Journey from Garden to Gourmet

Where It Started:

I’m Tim Kavarnos—a simple soul with a taste for the extraordinary.

My journey into the world of flavor began in a small-town backyard garden. Among rows of Bulgarian Carrot chilis, Mirasols, and my beloved habaneros, I fell in love with the fiery kiss of heat and the symphony of flavor that could come with it.

That garden lit the spark. But it was behind the bar and in the dining rooms of some of New York City’s best restaurants where the fire really started to build.

What I Couldn't Find:

Surrounded by shelves of sauces from around the world, I tried them all—and still felt something was missing.

Too many were overpowered by vinegar. Too many went for heat without harmony. I wanted a hot sauce that could enhance a dish, not dominate it. Something bold, yes—but with flavor that could stand up to the heat and still shine through.

Building the Blend

Inspired by my garden and the city’s rich culinary culture, I set out to create what I couldn’t find.

It took time. Trial. Error. A lot of scorched taste buds. But eventually, I found it—a sauce that struck the right balance: flavorful, complex, and just the right kind of fire.

Friends and colleagues noticed. Bottles started disappearing. What began as a personal project turned into something bigger.

From Sauce to Story

The name Salamander Sauce isn’t just catchy—it means something.

In ancient myth, the salamander was believed to live within fire. It didn’t flee from heat—it adapted to it. Endured it. Transformed through it.
